Считается, что блюдо это родилось в период правления семьи Медичи, когда в 1500-х годах на праздник Святого Лоренцо 10 августа мясо жарили на кострах по всему городу и раздавали народу.
Мясо для флорентийского стейка
Как правило, для флорентийского стейка берется говядина пород коров Пьемонтезе (Piemontese) или Кьянина (Chianina), при этом мясо должно быть выдержано минимум 5-6 дней. Толщина мяса для приготовления стейка должна быть примерно 3-4 см, кусок должен быть в виде сердца с оставленной Т-образной кости, на которой с одной стороны будет часть филе, а с другой стороны вырезка. Вокруг мяса обязательно должен быть жир, который во время готовки придает готовому блюду мягкость и сочность. Вес куска мяса для приготовления от 800 грамм до 1200 грамм.
Рецепт флорентийского стейка
Прежде всего, для приготовления берется специально выдержанное мясо. Начальная обжарка производится при высоких температурах чтобы «запечатать» мясо и не дать вытечь изнутри мясному соку. Мясо переворачивается только рдин раз, чтобы влага из потревоженного при готовке мяса не вытекла. Солится мясо только в конце готовки и ни в коем случае не во время. Когда мясо готово, оно накрывается фольгой, чтобы дошло естественным путем и стало еще мягче. Важно учесть, что считается плохим тоном просить для флорентийского стейка сильную прожарку «well done», фишка этого блюда в том, чтобы мясо внутри стейка оставлось сырым.

Цена куска мяса для приготовления блюда составляет от 30 до 80 евро, то есть в ресторанах минимальная цена за настоящий флорентийский стейк будет минимум 35 евро.
